We’re thrilled to be back in Suffolk this year to run two Westminster School expeditions – Summer and Autumn.
Autumn Course Dates:
Monday 25th September – Thursday 28th September 2017
Participants will split into two groups, spending half of their time in the kitchen learning to cook healthy, delicious and affordable meals from scratch and the other half of their time participating in field activities with local Suffolk growers and producers.
Our chef for the Autumn course is Peter Harrison.
Peter has 30 years restaurant experience, not only cooking in his own restaurant but in France, Australia and London. These days, Peter is back in Suffolk. He knows the area well and revels in the abundance of good local produce at his disposal. Nowadays he says that his inspiration comes more and more from the countryside around him and he regularly harvests wild vegetation to enhance deliciously new and exciting dishes.
The final programme of field activities is a work in progress but activities may include:
Foraging, making fires, carving, making cheese/sausages, working with sheep, exploring natural remedies, beekeeping, building a cob oven, butchery.
Evening talks and story-telling will be included.
