We’re thrilled to be back in Suffolk this year to run two Westminster School expeditions – Summer and Autumn.
Autumn Course Dates:
Monday 25th September – Thursday 28th September 2017
Participants will split into two groups, spending half of their time in the kitchen learning to cook healthy, delicious and affordable meals from scratch and the other half of their time participating in field activities with local Suffolk growers and producers.
Our chef for the Autumn course is Peter Harrison.
Peter has 30 years restaurant experience, not only cooking in his own restaurant but in France, Australia and London. These days, Peter is back in Suffolk. He knows the area well and revels in the abundance of good local produce at his disposal. Nowadays he says that his inspiration comes more and more from the countryside around him and he regularly harvests wild vegetation to enhance deliciously new and exciting dishes.
Field activities include foraging with Suffolk expert and Root Camp favourite, Jon Tyler, visiting Old Hall Community where we will explore their vast farm and way of life, and ferreting with one of Suffolk’s last trackers… rabbit will be on the menu that night!
We’ll also have wonderful guest speakers and a story teller.
