Welcome to the very first Root Camp abroad! Join us at Bolara 60, in Istria, where we will divide our time between cooking in Anna’s beautiful kitchen, working on the neighbouring land and farms. All the while, being surrounded by the beauty of the Istria peninsula.

Activities:

We will follow the usual Root Camp format, dividing time equally between kitchen and field.

Field activities:

(all activities are subject to change/weather dependent)

Organic farming at Bolara 60:

  • Building an outdoor smoker
  • Picking and drying herbs for tea
  • Learning how to plant and tend a veg garden
  • Collecting walnuts
  • Collecting logs from the forest, making kindling, chopping wood

 Tikel Farm (neighbouring):

  • Braiding onions and garlic
  • Pickling veg
  • Making apple vinegar
  • Tour of oil and wine vats
  • Olive oil tasting
  • Helping with the olive harvest; preparing/tasting teas
  • Foraging for mushrooms / exploring herbs

Talks/Demos:

  • Tasting/curing sausages and fish
  • Listening to hunting stories by the fire
  • Tour of wine cellar
  • Walking to Groznjan, a beautiful local hilltop town

Kitchen:

All our meals are prepared from scratch using the most local and seasonal produce.  We want to ensure that dishes are easy to replicate once home – so we use cheaper accessible ingredients and use mostly simple recipes, with flare.

About Anna:
Anna, aka the Culinary Anthropologist, is a cooking teacher, food anthropologist, consultant and writer, who splits her time between London and Istria.
Anna is author of Eat Slow Britain and co-writer of several cookbooks, consultant on BBC Radio 4’s The Kitchen Cabinet, and preserving guru for Riverford Organic. Her London cooking classes include preserving, bread making, vegetarian cooking, home curing & smoking, game and seafood. Her regular supper club, the Secret Kitchen, is a convivial dinner at which people sit together for a surprise seasonal menu. She is currently doing research for a PhD on food and tourism in Istria.

The House:                                                                                                                            

Inside, the house is heated with solar power and log burners, and open fires during cooler months. Thick stonewalls and heavy shutters keep the house cool in the summer. Each room is furnished with vintage pieces.
Outside, there is vegetable garden and small orchard and several olive trees form a small grove. Next to the house there is a summer kitchen for cooking activities, and a courtyard with wood-fired oven for pizza, and a large grill.

There are plenty of communal places for us all to relax and eat – and celebrate food together!

About Istria:

The Istrian peninsula juts into the Mediterranean Sea just opposite Venice, at the top of the long Dalmatian coast. Today most of Istria is in Croatia, with a smaller part in Slovenia. The quality of local fruit and vegetables is exceptional due to the rich soils and small-scale organic farming practices. Bolara 60 is situated in northwest Istria, surrounded by forested hills, green valleys, vineyards and olive groves. Locally people speak Croatian, Italian and several Istrian dialects. 

Nuts and bolts:

  • The course is 5 nights/6 days with all food, activity, accommodation, and van from and to the Ljubljana airport included
  • There are 5 bedrooms for 12 participants – so we will share in twos or threes.
  • Apart from Anna there will be a sous-chef and an kitchen assistant.
  • Root Camp will provide a travel escort, to take the group from Stansted airport to Bolara 60 and back.
  • Matt will oversee the outdoor sessions at Bolara 60, and local experts will be hired for specialist activities and demonstrations (TBA).
  • The travel escort will follow groups throughout the course and be on stand-by for any emergencies.
  • An interpreter will be brought in when required.
  • Each participant will receive a folder of recipes to take home.
  • This course is suitable for DofE Gold, Residential.

Travel: 

Cassia, Root Camp Founder, will be taking the following flights. It is highly recommended that participants purchase tickets for this flight, as our transit bus to and from Bolara 60 will connect with it. Participants who cannot get on this specific flight will be able to hire their own cab to Bolara 60. Please confirm your travel arrangements with us.  All participants are responsible for their own travel insurance.

What to bring:

  • Passport
  • European Health Card – EHIC
  • Rough and cosy clothing

  • Warm clothes as the nights may be cold
  • Strong outdoor boots
  • Drinking water bottle
  • Toiletries
  • Small backpack for day trips
  • Packable musical instruments
  • Mobiles – use is not permitted during working sessions

Please no open shoes/sandals in the kitchen
