We will be in the beautiful region of Istria, where Anna Colquhoun and her husband Matt have lovingly renovated an old stone farmhouse – Bolara 60.

Meadows, forest, olive groves and vineyards surround Bolara 60.  Anna and Matt have created a destination for culinary discovery in this remote spot and Root Camp will be taking this journey….

We will follow the usual Root Camp format, dividing time equally between kitchen and field.

In the Kitchen with Anna:
Anna will be teaching us how to cook seasonal dishes using the exceptional ingredients available locally. The menu will prioritise preparation of vegetables and cheaper fish and cuts of meat, melding Anna’s own cooking style with local flavours and techniques.

About Anna:
Anna, aka the Culinary Anthropologist, is a cooking teacher, food anthropologist, consultant and writer, who splits her time between London and Istria. Having trained as a chef in San Francisco and at Alice Waters’ legendary restaurant Chez Panisse, she has since travelled far to research and write about her subject. She is currently doing research for a PhD on food and tourism in Istria.

Anna is author of Eat Slow Britain and co-writer of several cookbooks, consultant on BBC Radio 4’s The Kitchen Cabinet, and preserving guru for Riverford Organic. Her London cooking classes include preserving, bread making, vegetarian cooking, home curing & smoking, game and seafood. Her regular supper club, the Secret Kitchen, is a convivial dinner at which people sit together for a surprise seasonal menu.

In the Field:
We will work on Bolara 60 land, and with local farmers and artisan food producers, foragers and cooks. Our outdoor itinerary will be pinned down closer to the time, but activities will likely include working in the kitchen garden (digging, planting and harvesting); collecting firewood and making fires; harvesting and drying herbs; building and testing an outdoor cold smoker; and visiting/working with a local producer. We may also harvest olives, and hunt for truffles and wild mushrooms in the forest (weather dependent). 

The House:

Inside, the house is heated with solar power and log burners, and open fires during cooler months. Thick stonewalls and heavy shutters keep the house cool in the summer. Each room is furnished with vintage pieces.
Outside, there is vegetable garden and small orchard and several olive trees form a small grove. Next to the house there is a summer kitchen for cooking activities, and a courtyard with wood-fired oven for pizza, and a large grill.

There are plenty of communal places for us all to relax and eat – and celebrate food together!

About Istria:
The Istrian peninsula juts into the Mediterranean Sea just opposite Venice, at the top of the long Dalmatian coast. Today most of Istria is in Croatia, with a smaller part in Slovenia. Its cuisine is a mix of Italian, Austrian and Slavic influences, and is known particularly for its truffles, wines, olive oil, charcuterie, pasta, seafood, wild asparagus and game. The quality of local fruit and vegetables is also exceptional due to the rich soils and small-scale organic farming practices. Bolara 60 is situated in northwest Istria, surrounded by forested hills, green valleys, vineyards and olive groves. Locally people speak Croatian, Italian and several Istrian dialects. 

Nuts and bolts:

  • The course is 5 nights/6 days with all food, activity, accommodation, and van from and to the Ljubljana
    airport included
  • There are 5 bedrooms for 12 participants – so we will share in twos or threes.
  • Apart from Anna there will be a sous-chef and KP assisting in the kitchen.
  • Root Camp will provide a travel escort, to take the group from Stansted airport to Bolara 60 and back.
  • Matt will oversee the outdoor sessions at Bolara 60, and local experts will be hired for specialist activities and demonstrations (TBA).
  • The travel escort will follow groups throughout the course and be on stand-by for any emergencies.
  • An interpreter will be brought in when required.
  • Each participant will receive a folder of recipes to take home.
  • This course is suitable for DofE Gold, Residential.

EasyJet Flight # EZ3245 Departing from Stanstead airport at 13:05 and arriving at Ljubljana airport at 16:10 on Saturday the 14th of October

EasyJet Flight # EZY3246 Departing from Ljubljana airport at 16:45 and arriving at Stanstead airport at 18:00 on Thursday the 19th of October

A van will be taking all participants from Ljubljana to Bolara 60 and back. Participants who cannot get on this specific flight will be able to hire their own cab to Bolara 60. Please contact us at if you have any questions.
